Grapefruit and Corn Summer Salsa
Grapefruit and Corn Summer Salsa is a perfect addition to a summer picnic; eat with corn chips or as a garnish for your favorite fish or seafood dish. The grapefruit juice mellows the flavors of the onions, radish and garlic but is still fresh and spicy. There can be unlimited variations to this recipe. After following the recipe the first time, the second time I made it I choose to chop the ingredients after slicing so it would be easier to scoop on to a corn chip, but it was still chunky enough to be added to another main dish later.
