Mom’s Secret Banana Bread

This is the best Banana Bread Recipe ever. It reminds me of being home with my family growing up. This was mom's go-to snack even over Chocolate Chip Cookies! It's light in color and bakes very well even at high-altitude. I won a banana bread contest with this recipe at work a few years ago. People loved that the bread was light in color, dense, moist and very flavorful. I think the toasted walnuts finishes off the flavor of this beloved American quick bread.

Ingredients

  • 1 cup sugar
  • 1/2 cup salted butter (at room temperature)
  • 2 large eggs
  • 1-1/2 cup mashed bananas (3 or 4 medium)
  • 1 tablespoon fresh lemon juice
  • 2 cups sifted all purpose flour
  • 3 teaspoons baking powder
  • 1 cup toasted chopped walnuts (or nut of choice)

Directions

Step 1 Cream the sugar and butter until combined.
Step 2 Add eggs one at a time, beating will after each addition.
Step 3 Place mashed bananas in a medium bowl and add the lemon juice.
Step 4 Add the banana mixture to the egg, sugar and butter mixture and incorporate thoroughly.
Step 5 Sift the flour with the baking soda and salt and add to the banana mixture until JUST combined. Do not over mix.
Step 6 Add the nuts, again do not over stir.
Step 7 Pour dough into a buttered 9x12 inch bread pan. Glass pans are better for high-altitude baking as they retain the moisture.
Step 8 Bake for 45-60 minutes or until knife, toothpick or skewer stick pull clean from the center of the loaf. Check half-way through baking time to make sure that the loaf in not over browning. If it is browning quickly, place foil over the top until baking has been completed.
