Home Made Girl Scout Thin-Mints Cookies (5 ingredients, no-bake)
Make your own mock Girl Scout Thin Mint cookies from Ritz Crackers or Oreo Cookies; no baking needed. This recipe is easy and has only five ingredients.
Ingredients
- 1 box of Ritz Crackers (do not substitute)
- 1 package of Oreo Cookies (center white cream frosting removed; you can substitute brands here)
- 1 16 ounce package white dipping chocolate (melting chocolate used for candy; found in the baking isle.)
- 1 16 ounce package (Nestles Toll House Semi-Sweet Chocolate Chips)
- 1/2 teaspoon Peppermint Flavoring (ONLY use FOOD GRADE Essence of Peppermint found in your local pharmacy.)
Note
Nostalgic Girl Scout Thin-Mints cookies. These cookies take me back to my old Girl Scout troop where me and my best girlfriend Cheryl were troops leaders. Back then, cookies were half the price they are today, but the cost of living has risen tremendously, and so must the price of a box of Girl Scout Thin-Mints cookies. . Sigh.
- I made a slightly different variation sprinkling fleur de sel on the very center of the cookies.
- Make sure that the Oreo's are at room temperature so that it is easier to separate the cookies without breaking them and the center frosting is easier to remove.
- For Vegan cookies: double check that your chocolate is vegan friendly - you can use Newman O’s instead of Oreos
- And, since the cookies are coated with the white dipping chocolate and Nestle Toll House chocolate chips they need to be kept cool and will do well in very warm environments. Store in an airtight container in a cool place, or keep refrigerated.
Directions

Line 2 large cookies sheets with wax paper.

Chop the white dipping chocolate into small-medium chunks. |  |
Step 3

Microwaving the chocolate SLOWLY - a few times in the microwave is BEST! (You do not want to over heat the chocolate or it will seize and will become hard and will no longer be edible). Microwave for about 15-20 seconds and stir. After the third time or so, keep stiring the chocolate and the rest of the solid chunks will melt. |  |

Once all the chocolate has melted, add the peppermint flavoring. Stir well to combine. |  |

Step 6

Place a cracker or cookie in the melted chocolate. Turn each "cookie" in the chocolate to coat completely. |  |
Step 7

Using a fork, lift the cookie from the melted chocolate and tap the excess chocolate from the cookie by tapping the folk against the side of the bowl. |  |

Carefully slide the cookie on to the wax paper and try not to allow any chocolate to drip or extend farther than the outer edge of the cookie. (This is optional. I like to make them as evenly coated as possible without drips on the side, but that's me!) |  |

Once the cookie sheet is full, place them in the refrigerator for about 30 minutes or until the chocolate has hardened to touch. |  |

Remove cookies from the sheet and place in a airtight contained and store in the refrigerator. |  |
