Key Lime Cupcakes (High-Altitude)

Ingredients

Cupcake

  • 1-1/4 cup flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 large egg
  • 1/2 cup sugar
  • 6 tablespoons softened butter (3/4 stick)
  • 1/4 cup fresh Key lime juice

Key Lime Butter Frosting

  • 1 tablespoon fresh Key lime juice
  • 6 tablespoons butter
  • 1-1/2 cup confectioners' sugar

Note

For those lucky sea-level bakers, subtract 1/4 cup of flour and add 2 tablespoons of sugar to the recipe. 

Directions

Step 1 Preheat oven to 350 degrees (170 F)
Step 2 Line cupcake pan with paper liners.
Step 3 In a medium bowl, combine flour, baking powder and salt. In a second medium size bowl, combine butter and sugar. Beat with an electric mixer on medium-high for 1 minute.
Step 4 Add egg and beat until combined. On low, beat in half of teh flour mixture, then the Key lime juice, followed by remaining flour.
Step 5 Spoon with a #16 scoop filling each cupcake liner 2/3 full.
Step 6 Bake for 17 minutes.
Key Lime Butter Frosting
Step 7 Cool on wire racks.
Step 8 In a medium bowl, combine the confectioners' sugar, softened butter and Key lime juice until very smooth.
Step 9 Spread on cooled cupcakes.
