Ingredients
Cupcake
- 1-1/4 cup flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 large egg
- 1/2 cup sugar
- 6 tablespoons softened butter (3/4 stick)
- 1/4 cup fresh Key lime juice
Key Lime Butter Frosting
- 1 tablespoon fresh Key lime juice
- 6 tablespoons butter
- 1-1/2 cup confectioners' sugar
Note
For those lucky sea-level bakers, subtract 1/4 cup of flour and add 2 tablespoons of sugar to the recipe.
Directions
Step 1

Preheat oven to 350 degrees (170 F) |
Step 2

Line cupcake pan with paper liners. |
Step 3

In a medium bowl, combine flour, baking powder and salt. In a second medium size bowl, combine butter and sugar. Beat with an electric mixer on medium-high for 1 minute. |
Step 4

Add egg and beat until combined. On low, beat in half of teh flour mixture, then the Key lime juice, followed by remaining flour. |
Step 5

Spoon with a #16 scoop filling each cupcake liner 2/3 full. |
Step 6
|
Bake for 17 minutes. |
Key Lime Butter Frosting
|
Step 7
|
Cool on wire racks. |
Step 8
|
In a medium bowl, combine the confectioners' sugar, softened butter and Key lime juice until very smooth. |
Step 9
|
Spread on cooled cupcakes. |
