Colorado Peanut Butter Cookies

Peanut Butter Cookies are amongst favorites of cookie lovers. This "Colorado" Peanut Butter Cookie recipe is a high-altitude cookie that bakes up thick and chewy while crunchy on the edges. Its rich flavor is due to the added apple vinegar and should not be omitted! The smooth Jiffy Peanut Butter is a perfect consistency for maintaining this cookie's structure at high-altitude (6,035 feet).

Ingredients

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup packed light brown sugar
  • 3/4 cups creamy peanut butter (jiffy)
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 tablespoon apple vinegar
  • 1 tablespoon water
  • 1-1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar (optional)

Directions

Step 1 Preheat oven to 375 degrees.
Step 2 In large bowl, beat butter brown sugar and peanut butter until well blended.
Step 3 Add egg and vanilal, vinegar and water. Beat well.
Step 4 With a whisk, stir the flour, baking powder, baking soda and salt together.
Step 5 Gradually add the flour mixture to the peanut butter mixture and blend well.
Step 6 Scoop dough with a #24 scoop (2" scoop) and shape into balls and roll in sugar.
Step 7 Place cookie dough balls on an un-greased cookie sheet.
Step 8 Bake for approximately 12-16 minutes until the edges and tops of the cookies are just slightly golden brown.
Step 9 Yields: 18 large cookies.
