Butternut Squash “Rice”


Step 1
Spiralize one butternut squash.
Step 2
Place desired amount of spiralized squash into a food processor and pulse until small "rice" forms.
Step 3
Rice size squash.
Step 4 Remove from food processor and store in glass containers with air-tight lids.
Step 5 Fry "rice" in a non-stick skillet, steam, stir-fry, add to soup, or blanch in salted water. Choose ways to add the "rice" to dishes just like you would any standard brown or white rice.
Step 6
As picture here, I made a squash fried "rice" version of my traditional Breakfast Fried Rice. I also use this "rice" in my Stuffed Peppers.
